Directions
- 1Preheat the oven to 425 degrees Fahrenheit. Prep a baking sheet by lining it with parchment paper or a silicone baking mat.
- 2Slice the peppers in half and remove the seeds and stems. Place the peppers on the baking sheet and drizzle with oil. Sprinkle with salt and pepper, and bake for 40-45 minutes, or until deeply roasted with some char. Flip the peppers halfway through for an even roast.
- 3Allow the peppers to cool slightly before placing the peppers and cottage cheese in a food processor or blender, and blend until smooth.
- 4Portion into 4 servings and serve with Veggie Wholesome Crispy Crackers.
